[laughter] >> surae: crank up the a/c. >>> it's wednesday. that means jamie and katie from utah restaurant association and sam from devour magazine are back at the table. >>glen: they're sitting down with the president and founder of copper field publishing. he's responsible for city weekly, devour utah magazine. >> surae: this week, they're at maza. >> we're at the maza in salt lake city. we're honored to have the president and founder of copper field publishing. i would have gone to a taco cart. ladies why did we go to maza? >> guest: something more glamorous than a taco cart. i feel like city weekly is the heart of the salt lake city community. and 9th and 9th also generates that. and a place in maza that is warm and caring. >> what if you can't say the names of the food correctly? do you sit and smile? >> that's why we're with john. this is his heritage yum! it's beautiful. >> i'm trying to say the names of the dishes we have in front of us. help us out. >> taboullah, it's parsley primarily. it's almost the same as a greek salad. dining in our culture is a family thing. when i was young, it was like at a certain time on sunday or every day, we sat down to have a meal. three of my grandparents came through ellis island. two in 1906. he was a copper miner. >> do you find a strong greek community here? >> there is. i worry about it because there's no new greek blood coming in here. a couple marries out of the community or moves. so it's not growing with growth. it's growing. but it's steady. they're very, very proud of everything that they hold onto from food to family to independence, culture, songs, music, everything. >> if you noticed when john was talking about his grandfather, just a tiny tear was caught in the corner of his eye. >> one thing you should know about me, i've cried in front of everybody. >> people who know you, know you have this big, tender heart. but others wouldn't know. you have an alternate independent magazine. it's on the rowdy side. >> we're not mean-spirited, but we're not afraid to pull a punch. >> why is that? >> because we have to. the institutional media has a head start and a couple of billions dollars here and there: we they've got a deep well. the city weekly has grown into somewhat of an institution here. we've won award after award. so our journalism is second to none. >> it seems like copper field publishing now is a full-service media company rather than a weekly newspaper. >> when we carne, we were only 12 pages as a newsletter. >> you were printing in your basement by the way. >> we did everything in the basement, put it together and sorted it, wrote it there, commenced there. everything. we grew the newspaper successfullsuc succesuc successfully from scratch. we have a magazine division with devour magazine. devour is utah's best magazine. we do specialty publications like city guide and best of utah, which is our franchise that we started 30 years ago. right now, we're doing a publication coming out soon called we are utah. it's totally unique. we >> it's been an absolute delight and pleasure.
