We're in the kitchen with Andrew from Fresh. by Genes, creating the perfect meal, and we're starting with a delicious side that can do double duty as a vegan entrée! http://chic.clipsyndicate.com/video/playlist/12463/7203295?cpt=8&wpid=2637 WEVV "cooking with" series, we're introducing some new recipes, and a new chef! we're in the kitchen with andrew from fresh by gene's, creating the perfect meal, and we're starting with a delicious side that can do double duty as a vegan entree! andrew: sweet potatoes are one of my favorite. gretchin: and you made me like the sweet potatoes. andrew: yeah, they're one of my favorite vegetables. we do a smoked, sweet potato salad on the food truck. i want to basically dice them up, and make a little hash out of them. so, i put some of my favorite things in there: ginger, jalapenos, which is optional, and then i'll garnish with green onions. it's a super simple, super healthy vegan dish, but it's packed full of flavor! you get nice, little crispy bits on the sweet potatoes, it is a sweet surprise at the end. gretchin: and i love what we're using! no sugar, no cinnamon, these are gonna taste like sweet potatoes should taste. andrew: exactly. i do not like to sugar my potatoes. so i'm gonna peel these first. you can do this with peels on, at home i will leave the peels on. it's up to you. for safety's sake, we don't want anybody cutting themselves, sweet potatoes are a hard vegetable, so i'll just start off with a flat edge. this, i use coconut oil. you can use butter, olive oil, whatever you prefer. you want to do about a tablespoon. i'm gonna bring this over here, it's melted so i'm gonna get the sweet potatoes in here. do you mind to drop the jalapenos back there? now we're getting a nice little caramelization on some of these, the sugars in the sweet potatoes are really starting to get good and caramelized. it's gonna be a really good crunch. we'll add the salt and garlic powder. this is a teaspoon of garlic powder. i don't put raw garlic in here, because it will burn. this is about a teaspoon of salt. these are done here, so i'm gonna add just a little bit of pepper. and we're done, we've got some really good caramelized pieces, i like those. if you don't, that's fine, just stir it more often. however you want to do it, but this is how i love it. i love the caramelized sugars in the sweet potatoes. gretchin: it brings out a better flavor. everybody needs to eat sweet potatoes like this. andrew: agreed. gretchin: stop using sugar, stop throwing marshmallows on top of them, and eat them the way they're meant to be. you may recall that fresh by gene's won evansville food truck fest and they took best taco at taco fest. andrew teaches cooking classes too, which make a great date night, or christmas gift. i'll drop the full recipe online, if you do make this dish, tag me in the post, or send me an email to let me know how it turned out. good morning tri-state! arctic boundary is moving through the area. temperatures will be in the upper 20s through the morning. with wind chills in the teens. despite mostly sunny skies, not much in the way of a warm up today, low to mid 30s tri-state wide. winds will be out of the west northwest 5-15mph gusting to 20. clear and cold tonight, not as breezy with temperatures dropping in the teens and low twenties. friday clear and cold mid to upper 30s. friday night clouds increase. saturday morning an upper level low passing to our north will bring snow showers or a period of light snow through the area, could see a dusting north of i-64. otherwise cold and dry with highs in the mid 30s. sunny and cold sunday with highs in the upper 30s. warm a bit on monday with highs in the upper 40s to around 50. then more
